Gluten-free banana bread (dairy-free & vegan)
Who doesn’t love a piece of good banana bread? So easy to make.
Prepping time should only take about 10-15mins.
Tried a gluten-free, vegan & dairy-free option and it was just as good as the dairy version.
3 tips to make it taste the best:
1/ mix the dry ingredients in a bowl
2/ In a separate bowl mix the wet ingredients.
3/ Then add the wet to the dry ingredients and mix well.
Every time I make this it disappears in 30 mins. Added currants and walnuts last week and it was absolutely yummy!

Gluten-free banana bread (dairy-free & vegan alternative in the recipe)

Ingredients
- 1 cup and ¾ cups (265 grams) of gluten free self-raising flour
- ¼ cup (40 grams) of gluten free plain flour
- 1 tablespoons of coconut flour (optional)
- 1 teaspoon of cinnamon
- 2/3 cup (140 grams) of coconut sugar or brown sugar
- 1/4 cup of raisins (optional)
- ¼ cup of walnuts (optional)
- 1 teaspoon of vanilla essence
- 2 overripe medium bananas
- 2 eggs lightly whisked or 2 egg replacers (4 tablespoons of water)
- 1/2 cup (125ml) of dairy free milk
- 50 grams of dairy free butter or real butter (melted)
Instructions
- Set the oven at 180 degrees.
- Place dry ingredients in a bowl and mix with a spoon
- 1 cup and ¾ cups (265 grams) of gluten free self-raising flour
- ¼ cup (40 grams) of gluten free plain flour
- 1 tablespoons of coconut flour (optional)
- 1 teaspoon of cinnamon
- 2/3 cup (140 grams) of coconut sugar
- 1/4 cup of currants (optional)
- ¼ cup of walnuts (optional)
- In a separate bowl place wet ingredients
- mash the 2 overripe banana
- add 1 teaspoon of vanilla essence
- 2 eggs lightly whisked or 2 egg replacers (4 tablespoons of water)
- 1/2 cup (125ml) of dairy free milk
- 50 grams of dairy free butter or real butter (melted)
- Mix well then add to the dry ingredients.
- Add the mix to a bread loaf baking tin,
- tap gently on bench three times to remove any air pockets
- bake for 50 mins.
- Check with a skewer or a knife, if it comes out clean it’s ready,
- if not bake it for another 10 mins.
